Beef Vegetable Crock Pot Soup


A healthy crock-pot soup with ground beef, three kinds of beans, pasta or rice and plenty of fresh vegetables.



Ingredients:

  • 1 lb lean ground beef
  • 1/2 chopped sweet onion
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1 can red kidney beans
  • 1 can lima beans
  • 1 can white kidney beans
  • 1 can tomato soup
  • 2 cans beef broth
  • Pastina or small pasta, or rice
  • 1 tsp oregano
  • 1 tsp basil
  • Salt and pepper to taste

Method

Brown beef and onion; add celery and carrots and continue to cook for about 5 minutes. Add mixture to crock pot and pour in broth and tomato soup. Add spices and cook on high for four hours. Add pasta and continue to cook for 2 hours or until pasta or rice are done.

Notes: I sometimes add a small chopped zucchini and half cup of frozen corn. You can add any vegetable you like.
