
Corned beef brisket is slow-cooked in a crockery cooker with stout, beef stock, onion, carrots, celery, parsnip and fresh dillweed and dried spices.
Place all vegetables, liquid, and spices in a slow cooker. Add corned beef, fat side up. Cook for 2 hours on high setting, then turn down to low and cook until tender, about 4-5 hours more. Lift meat from cooker; slice and serve.
