Blue Plate Special (roast Beef In The Crock Pot)

Beef roast, seasoned with oregano and slow-cooked in a crock pot. Add vegetables, if desired.

Ingredients:

2-3 lb Roast, such as rump round, english, butt) (do not salt
2 Large Garlic Cloves, peeled and sliced into thirds
1 tb Oregano
Self-rising Flour
2 tb Oil

Directions:

Cut 1-inch slots about 1/2-inch deep in the roast. Insert 1 slice of garlic into each slot. Sprinkle 1/2 Tb. of oregano on each side of roast. Then lightly roll in self-rising flour, just enough to coat (not heavily). Put 2 T. oil in a pan; get hot enough so when you put roast in it will sear. Make sure to sear all sides. Spray crockpot with non-stick cooking spray. Put in roast. Turn the crock pot on high. Roast 4-5 hrs. or until tender. Keep most of broth drained off as it is roasting. If you like, about 1 1/2 hrs. before done, you may add some carrots, potatoes, onions etc. After slicing to serve, sprinkle with salt to taste for a more moist roast.
