Bluegrass Country Ham and Potato Soup


Prepare this ham and potato soup for lunch or dinner. Cream and cheese make this soup extra rich.



Ingredients:

  • *2 pounds red-skinned potatoes, sliced into 1 inch slices
  • *1 pound country ham, bones removed and diced
  • *3/4 cup sliced green onions
  • *1 quart heavy cream
  • 1 1/2  cups milk
  • *1 cup shredded smoked Gouda cheese
  • *2 tsp. ground black pepper
  • *8 oz. Velveeta or other cheese food, cubed
  • 1/2 stick butter or margarine (1/4 cup)

Method

Combine all ingredients in a large slow cooker. Cover and cook on low-heat setting for 4 to 6 hours or until potatoes are tender. To serve garnish with diced green onions and serve with a fresh salad and crusty French bread.

Notes: This soup is very popular during the winter months. It is a hearty lunch or dinner for a cold windy day.
