Spicy Hot Chili


This meaty, no-bean chili is for those who like spicy, hot food. Jalapeno peppers, crushed red pepper, and hot chili powder contribute to the hotness.



Ingredients:

  • 1 lb. Beef Chuck Steak (cut into 1/2-inch cubes)
  • 1 tablespoon olive oil
  • Kosher Salt
  • Cracked Pepper
  • 1 lb. ground raw turkey
  • 1 lb. ground pork
  • 5 to 7 jalapano peppers or other chilies, stemmed and sliced (DON'T REMOVE THE SEEDS)
  • 1 4-ounce can green chilies
  • 1 12-ounce can beer
  • 2 cans beef stock (or 1 14-ounce can beef broth and 1 14-ounce can chicken broth)
  • 3 tablespoons HOT chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon Smokey paprika
  • 1 tablespoon ancho Chile powder
  • 1 tablespoon Mexican oregano
  • 2 tablespoons crushed red pepper
  • Optional: (2 cans of diced tomatoes, 1 diced onion, 1 diced green sweet pepper)

Method

In a large bowl, combine olive oil, salt, pepper and chuck meat. Once the meat is coated, brown the chuck in a large skillet. Once browned, move into a slow cooker. Now brown turkey and pork separately in the same skillet, season with salt and pepper as you brown the meat. Transfer each batch to slow cooker once browned. Remember to work in small batches when browning so the meat browns and does not steam instead. To the slow cooker, add the remainder of the ingredients and cook for 7-9 hours on low-heat setting. Stir occasionally because this will cause the meat to break apart as it becomes tender.

Notes: The longer this cooks, the thicker it will become!
