Busy Day Complete Beef Dinner

This slow cooker beef is coated in soup mix, topped with frozen vegetables, and cooked in broth and vegetable soup mix.
 

Ingredients

  • 3-4 pounds Boneless Beef Roast
  • 1 tablespoon "Seasoned Salt"
  • 1 envelope onion soup mix
  • 1 large red onion, sliced
  • 2 pkgs (15-16 oz each) frozen
  • vegetables-potato blends
  • 3 Cups Beef Broth
  • 1 envelope vegetable soup
  • mix

Method

Season both sides of beef roast with seasoned salt. Rub the roast thoroughly with the onion soup mix, being sure to use all of the soup mix. Place roast in bottom of large (12 cup) slow cooker, cover with the sliced onion then the frozen vegetables. Pour the broth into the pan, and then sprinkle the vegetable soup mix evenly over the vegetables. Cook 5-6 hours until beef is tender.

 

Notes: If you have an adjustable temperature cooker you can bring the broth to a boil, then reduce the heat to a "simmer" and cook 4-5 hours. The overall reduction in cooking time is only about an hour this way.
