Chicken Ratatouille Stew - Crockpot

Delicious chicken ratatouille, with lots of eggplant, zucchini, and tomatoes, seasoned with basil and oregano cooked in the crock pot.

  • Servings: 6

Ingredients:

4 Boneless Skinless Chicken Breasts Halves, cut into 1" pieces
1 jar (30 Oz) Spaghetti Sauce
1 Medium Eggplant (peeled & Coarsely Chopped)
2 Tomatoes, coarsely chopped
2 Small Zucchini, sliced
1 Green Pepper, cut into 1" pieces
1 Large Onion, chopped
3 Garlic Cloves, minced
1 tsp Dried Basil Leaves
1 tsp Dried Oregano Leaves

Directions:

In a large bowl, combine all ingredients; mix well. Pour into a 3-1/2 or 4-quart crock pot. Cover, cook on low setting for 8-10 hours or until chicken is tender and no longer pink.
