Chicken Salsa

Skinless, boneless chicken thighs or breasts are slow-cooked in a crock pot with canned salsa, and served over rice.

Ingredients:

1 lb Boneless, skinless chicken thighs or breasts
Large Jar Salsa, mild, medium, or hot--your preference.
Hot Cooked Rice

Directions:

In slow cooker, combine chicken thighs or breasts with salsa and just enough water to wash salsa out of jar. Cook on high-heat setting until done, about 3 hours (or on Low for 6 hours.)Fix rice according to package directions. Serve Fiesta Chicken over rice.

Helpful Tips:

For more color, add a can of drained corn.
