Ingredients:
| 1 lb | Boneless, skinless chicken thighs or breasts |
| Large Jar Salsa, mild, medium, or hot--your preference. | |
| Hot Cooked Rice |
Directions:
In slow cooker, combine chicken thighs or breasts with salsa and just enough water to wash salsa out of jar. Cook on high-heat setting until done, about 3 hours (or on Low for 6 hours.)Fix rice according to package directions. Serve Fiesta Chicken over rice.
Helpful Tips:
For more color, add a can of drained corn.
