Chicken Spanish Rice Casserole

The crock pot comes in handy for this simple yet flavorful meal. The black beans and corn flavor the rice, and the tomatoes bring it all together.

  • Servings: 4

Ingredients:

1 can Black Beans, drained and rinsed
1 can Whole Kernel Diced Corn, drained
2 Medium Onions, chopped
2 Green Peppers, chopped
28-oz can Diced Tomatoes & Their Juice
8-oz can Tomato Sauce
1 cup Water
2½ tsp Chili Powder
1½ tsp Salt
2 tsp Worcestershire Sauce
1 cup Raw Long Grain Rice
4 Skinless, boneless chicken breast halves

Directions:

Combine all ingredients, except the chicken, in a 4-quart crock pot. Stir thoroughly. Add uncooked boneless chicken breast halves on top of mixture. Cover and cook on low heat setting about 7 to 8 hours, or on high setting about 3 1/2 to 4 hours or until rice is tender.
