Chicken, Onion & Swiss Cheese Bake


Strata straight from your crock pot--just mix all the ingredients and let it steam all day.



Ingredients:

  • 2 cup sliced onions
  • 2 Tbsp butter
  • 8 slices day old bread, cubed (8 cups)
  • 2 cup cooked chicken, chopped
  • 1 1/2 cup shredded Swiss cheese (6 oz)
  • 4 eggs
  • 2 cup milk
  • 1/2 tsp salt
  • 2 Tbsp snipped fresh Italian parsley
  • Garnish platters with fresh lettuce leaves and hearty slices of Bermuda onion

Method

In a skillet cook onion in butter until tender. Place 1/3 of bread cubes in a greased 2 pound coffee can or 3 pound shortening can. Add half the onions, chicken and cheese. Repeat layers ending with bread cubes. Press lightly, if necessary, to fit. Beat eggs, milk and salt together, pour over bread. Cover with foil, crimping edges to sides of can and set in crock pot. Pour 2 cups water into cooker. Cover, cook on low heat for 8-9 hours. Remove from cooker, let stand 5 to 10 minutes. Loosen edges with spatula or knife. Carefully turn into a serving bowl. Garnish with snipped parsley.

Notes: Serve slices of Chicken Bake atop platters lined with fresh lettuce leaves and Bermuda onion slices.
