Chipotle Pork

Chipotle peppers add spiciness to this slow-cooker pork and black bean recipe. Serve over hot cooked rice.
 

Ingredients

  • 1 16 oz Pork Tenderloin or Pork Roast
  • 2 cloves Garlic, Chopped
  • 1/2 Yellow Onion, Chopped
  • 1/2 Cup Spanish Mojo Sauce
  • 1 or 2 Chipotle Peppers in Adobo Sauce, Chopped (Use 1 for Medium Flavor, 2 for Extra Spicy)
  • 1 Can Diced Tomatoes with Green Chilies
  • 1 Can Seasoned Black Beans

Method

Place all ingredients into slow cooker, except for black beans (these will be added during the last half hour). Slow cook until the pork is for tender (3 hours on high heat setting or 6 hours on low heat setting). Then add beans and cook for another 30 minutes.

 

Notes: This is great over steamed rice witha pinch of cilantro and lime.
