Cranberry-Pear Dressing

This stuffing recipe is prepared in the slow cooker to free up the oven for the turkey. Toasted pecans, celery, pears, and cranberries are tossed with the stuffing mix.
 

Ingredients

  • 1/2 cup butter, divided
  • 1/2 cup chopped pecans
  • 1/2 cup chopped celery
  • 2 large pears (any variety), cored, peeled, and cubed
  • 1/2 cup dried cranberries
  • 1 (14-16 oz.) package cubed herbed stuffing mix
  • 1 (14 oz.) can chicken broth
  • 1/3 cup water
  • 2 eggs slightly beaten

Method

In a large skillet melt 1/4 cup butter over medium heat. Add pecans and saute until toasted and fragrant, about 5 minutes. Remove pecans from skillet and reserve until needed. Melt remaining 1/4 cup butter in skillet over medium heat. Add celery, pears, and cranberries. Cook, stirring frequently, until crisp tender, about 2 minutes. Place celery mixture, toasted pecans, and stuffing mix in 4-5 quart slow cooker. Stir to combine. Add chicken broth, water, and eggs. Toss gently to mix. Cook on high 1 hour; reduce heat to low and cook 4 hours. (Alternately, cook on low only, 6-8 hours.)

 

Notes: *By using the slow cooker to cook the stuffing, I can free up my small oven for other parts of the holiday meal. Also, we have started frying a turkey for our holiday meals and this is a great way to get a moist and delicious stuffing.
