Rich and creamy with a hint of Mexican spice--all cooked in your crock pot. How easy can it be?

  • Servings: 4-6


½ Large White Onion, chopped
2 cups Cooked Chicken, deboned and cut into bite size pieces
14 oz can Low Sodium Chicken Broth
1¼ cups Canned, diced mexican style tomatoes with cilantro and lime
½ cup Canned Diced Green Chilies
1 tsp Cumin
1 tsp Chili Powder
1 cup Canned Corn, drained
2 cloves Fresh Garlic, minced
¾ cup Sour Cream
3 Tbsp Fresh Cilantro, chopped
1 bag Tortilla Chips
2 Limes Cut In Wedges


Put onion, chicken, chicken broth, tomatoes, green chilies, cumin, chili powder, corn, and garlic in crock pot.

Cook on low for four hours.

At end of the cooking time add cilantro and stir in sour cream.

Serve topped with tortilla chips and a squeeze of lime.
