Crock-a-Noodle Stew

This easy chicken dish uses the slow cooker. Just place the chicken in the cooker with vegetables, broth, and noodles and you have a meal.
 

Ingredients

  • 4 carrots, peeled and cut in chunks
  • 8 small white onions
  • 2 cloves garlic, minced
  • 2 lb. meaty chicken pieces, skinned
  • 1 14-oz. can chicken broth
  • 3 cups uncooked noodles

Method

Place carrots, onion, and garlic in a 4-quart slow cooker. Top with chicken; pour broth over all. Cover and cook on low-heat setting for 6-8 hours or high-heat setting for 3-4 hours. Stir in noodles and cook 30 minutes more or until noodles are tender.

 

Notes: Since this is a super-easy dish to put together, I make it when time is at a premium. Serve with a simple lettuce salad and you can have dinner on the table in five minutes.
