Throw all ingredients in the crock pot (onions first, then meat, taters last)
Add water until it covers the roast and other ingredients.
Cook down until tender, (8 to 9 hours) adding water as necessary.
Serve over rice, noodles, or mashed potatoes.
Store leftovers in fridge for up to one week.
Change, add or adjust seasonings to taste.
