Crock-Pot Sauerbraten

A beef pot roast is slow-cooked in ketchup, vinegar, brown sugar & pickling spices, for this slightly different sauerbraten.
 

Ingredients

  • 3-4 pound beef chuck pot roast
  • 3 to 4 whole bay leaves
  • 3/4 cup white vinegar
  • 3/4 cup light brown sugar
  • 14 oz bottle of ketchup
  • 1 large sweet onion, chopped
  • 1 Tablespoon mixed pickling spices
  • 30 gingersnaps

Method

Put beef roast in crock pot, cutting to fit, as necessary. Add remaining ingredients to crock-pot. Put in just enough water to barely cover the roast. Cook for 6 to 7 hours on high heat setting, or 12 to 14 hours on low. Remove meat; slice. Thicken remaining drippings to make gravy. Pour gravy over roast slices and serve.

 

Notes: I added the pickling spices because I pickled alot of things, so one day while experimenting I added some to the roast. It was a sensation. Try it!
