Crock Pot Sausage and Vegetable Lasagna

Everyone loves lasagna and this version is so easy to make when you simply assemble and let it bake in your crock-pot all day.
Ingredients
- 1 lb bulk hot sausage
- 1 cup zucchini slices
- 1 cup shredded carrot
- 1 26 ounce jar spaghetti sauce
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- 9 lasagna noodles, uncooked
- 1 10 ounce package chopped spinach
- 8 ounces ricotta cheese
- 8 ounces shredded mozzarella cheese

Method
In a large skillet over medium heat, cook sausage, breaking up as it cooks. Remove from heat and drain off fat. Stir in zucchini, carrot, spaghetti sauce, oregano and chili powder. Spoon 1/4 of sauce mixture into a 6 quart crock pot. Top with 3 lasagna noodles. Scatter with 1/2 of spinach. Spoon half of ricotta cheese over top. Sprinkle with 1/2 of mozzarella cheese. Spoon another 1/4 of sauce over cheese. Top with 3 noodles, remaining spinach, ricotta, mozzarella, 1/4 sauce. Cover with 3 noodles and remaining sauce. Cook on low for 5 to 8 hours.
