Crockful-of-Vegetables Beef Surprise Soup

Cubes of beef, great northern beans, carrots, onion and zucchini are cooked in beef broth in the crock pot, with egg noodles and evaporated milk added just before serving.
Ingredients
- 3/4 lb boneless round steak
- Nonstick cooking spray
- 1 cup peeled and diced carrots
- 1/2 cup diced onions
- 1 medium zucchini, chopped
- 1 15-oz can Great Northern beans, drained and rinsed
- 1 tsp salt, or to taste
- 1/2 tsp pepper
- 1/4 tsp garlic powder
- 32 ounces (4 cups) beef stock
- 2 cups cooked (no-yolk) wide egg noodles, cooked and drained
- 1 cup evaporated (2%) milk

Cut beef into bite-sized cubes; brown in a pan sprayed with nonstick cooking spray. Place beef and other ingredients, except noodles and milk, in (5- to 6-qt) crock pot; cook on low heat setting for 7-8 hours. About 15 minutes before serving, stir in egg noodles and milk; heat through and serve.
Notes: This is a low-fat, low-calorie recipe. For people on salt-restricted diets, you may omit the salt and add it to individual servings as desired.
