Dobbs' Roast Pork With Saurkraut & Apples

|3 lbs||Boneless Pork Roast|
|1× 16 oz pkg||Sauerkraut|
|4||Granny Smith Apples; Peeled, cored and sliced into ½" pieces|
|1 Tbsp||Caraway Seeds|
|2||Medium Red or Vidalia Onions|
|4 cups||Apple Cider|
|Water To Cover Meat|
|Salt & Pepper, to taste|
|3 Tbsp||Cornstarch & 1/2 Cup Cider, for a slurry|
In a slow cooker, add the cider, pork, sauerkraut, apples, caraway seeds, bay leaves and onions. Add water to cover the meat. Cook on low for 12 hours. The last hour of cooking, increase heat to high and add the slurry mixture to thicken the gravy.
Serve with boiled or mashed potatoes and add a vegetable of choice.
