Easy Breezy Corn Chowder

fYes, that is what I like, dinner in a flash. I don't like to stand at the range all day cooking because quite frankly I can't. This is such a mobile society that families don't eat too many meals together and when they do you want to get the food on the table and spend that precious time with your friends and family anyway. It's time to start thinking about chili and crock pot meals, chowders, soups, and stews. My DH just made a comment today about a bigger crockpot. The one we own is small, very small indeed, but it has served us well for almost 3 years now. My favorite thing to make is Easy Breezy Corn Chowder. I don't necessarily have to have meat in it, but my DH likes meat so I usually add chicken to the pot. Add all ingredients to the pot. Stir it, serve with corn bread muffins and apple butter and you have yourself a treat that won't soon be forgotten. Toppings: Bacon Bits, Croutons, Cheddar Cheese, Cheese Straws, Sunflower Seeds, Sour Cream, Crushed Potato Chips, or French Fried Onions. Enjoy!

Ingredients:

1 cup Water
1 pkg Frozen Spinach
1 pkg Frozen Corn
1 can Campbell's Cream of Mushroom Soup
1 Soup Can of Milk
Chili Powder, to taste
Salt & Pepper, to taste
3 Tbsp Extra Virgin Olive Oil
2 Boneless Skinless Chicken Breasts, grilled and diced
Sweet Vidalia Onion, sauteed in olive oil

Directions:

Add all ingredients to the crock pot and cook on low for 4 hours or until warmed all the way through.

Helpful Tips:

Serve with corn bread muffins and apple butter and you have yourself a treat that won't soon be forgotten.
