Easy Red Beans and Rice

These beans are cooked in the slow cooker with bacon and a ham bone. Hearty enough for a main dish.
 

Ingredients

  • 1 tsp cornstarch
  • 1 lb red beans, soaked overnight and drained
  • 1 ham bone
  • 1/2 lb sliced bacon, chopped
  • 1/2 stick butter (1/4 cup)
  • 1 tsp salt
  • 3 stalks celery, chopped fine
  • 2 medium onions, chopped fine
  • 1 bunch green onions, chopped fine

Method

Put 3 inches water in a slow cooker and stir in cornstarch. Add all remaining ingredients. Cover and cook on low-heat setting for 8 hours or on high-heat setting for 4 hours or until beans are tender. Remove ham bone and chop meat; return meat to cooker. Serve over rice.
