Healthy Lentil Soup


Lentils are slow-cooked in a crock-pot along with onions, celery, carrots, and parsnips in vegetable broth that's seasoned with thyme and garlic.



Ingredients:

  • 2 medium onions, diced  
  • 2 celery stalks, chopped  
  • 4 carrots, diced  
  • 2 parsnips, diced  
  • 2 garlic cloves, minced  
  • 1 3/4 cups brown lentils, rinsed, drained and sorted
  • 1 tsp dried thyme  
  • 8 cups vegetable broth  
  • Salt and freshly ground pepper

Method

Combine all ingredients in crock-pot. Cover and cook on high until lentils are tender, 5-6 hours on high. Add salt and pepper to taste.
