A flavorful vegetarian chili with a variety of beans, made easy in a slow cooker.

  • Servings: 8-10


½ – ¾ cup Chopped Onion
2 Tbsp Olive Oil
15 oz can Garbanzo Beans, rinsed
15 oz can Other White Beans, such as white kidney, great northern, etc. (rinsed
2 cans (15 Oz) Diced Fire-roasted Tomatoes, plus 1-½ cans water
1 Packet Chili Mix
1 cup Chopped Bell Peppers
1 tsp Salt
dash Cumin, to taste
1 cup Shredded Cheddar or Jack Cheese


In a crock pot on high heat, or Dutch oven, saute onions in oil. When cooked down slightly, add all remaining ingredients, except cheese, and cook on low heat for at least three hours. During last hour, stir in cheese.

Helpful Tips:

Wonderful alone or with tortilla chips and sour cream. You'll be coming back for seconds on this one. Keeps well in an airtight container. Keep these ingredients always on hand for a hearty cold weather dish. Everyone raves about this healthy and delicious dish. You won't miss the meat.
