Ingredients:
| 1 Tbsp | Canola or Olive Oil |
| 1 | Large Yellow Onion, finely diced |
| 2 | Ribs Celery, finely diced |
| 1 | Red Pepper, finely diced |
| 1 | Large Sweet Potato, cut into ¼" cubes |
| 2 Tbsp | Fresh Minced Garlic |
| 1 Tbsp | Cumin |
| 1 Tbsp | Kosher Salt |
| 1 Tbsp | Fresh Ground Black Pepper |
| 1 tsp | Onion Powder |
| 1 tsp | Oregano |
| 1 tsp | Cayenne Pepper |
| 1 cup | French Lentils |
| ½ cup | Quinoa |
| 6 cups | Vegetable Stock |
Directions:
Add all ingredients to crock pot and stir well. Cover and cook on medium heat for 6 hours, or until lentils and potatoes soften.
