Italian Hot Crock


This pasta sauce, made with Italian sausage, mushrooms plum tomatoes, tomato paste & herbs, served over shell macaroni and parmesan cheese.



Ingredients:

  • 1/2 lb hot Italian sausage
  • 1/2 lb sweet Italian sausage
  • 4 cloves garlic, minced
  • 1/2 lb fresh shiitake mushroom caps, sliced
  • 1 medium onion, diced
  • 4 Tbsp olive oil
  • 4 cups Italian plum tomatoes, crushed
  • 2 small cans tomato paste
  • 8 oz water (1 cup)
  • 1 tsp crushed red pepper flakes (or to taste)
  • 1 Tbsp dried basil
  • 1 Tbsp dried oregano
  • 1 Tbsp dried Italian herbs
  • 1 cup Parmesan cheese, divided
  • 1 lb medium pasta shells, cooked according to package directions and drained

Method

Cook and drain sausage. Combine all ingredients in crock pot except for the parmesan cheese. Cook on low heat for 6-8 hours; stir in 1/2 cup of the parmesan cheese for the last hour of cooking. Serve over pasta shells, sprinkling with remaining 1/2 cup of cheese for garnish.

Notes: The longer this cooks the better it gets.
