Italian Pork Sauce


Pork ribs flavor this tomato sauce seasoned with oregano, basil, and garlic. Good served over gnocchi.



Ingredients:

  • *4 country-style pork ribs, bone in
  • *2 tablespoons olive oil
  • *3 6-ounce cans tomato paste
  • *3 cups water
  • *2 teaspoons dried oregano
  • *2 teaspoons dried basil
  • *2 tablespoons dried parsley flakes
  • *4 cloves garlic, chopped
  • *1 teaspoon onion powder
  • *1 tablespoon sugar
  • *Salt and pepper to taste

Method

Step 1- In medium skillet, brown pork ribs in olive oil until outside of ribs have a slight crust. Step 2- Place ribs in slow cooker. Whisk water with tomato paste and add to cooker. Stir in remaining ingredients. Step 3- Cover and cook on low-heat setting for 6 to 8 hours, or on high-heat setting for 4 to 5 hours. Pork should be tender when done. Step 4 Remove rib bones from sauce. Sauce is now ready to serve with your favorite pasta.

Notes: Double the amount of pork for a more hearty meat sauce. This sauce is best served with gnocchi.
