Kielbasa Soup

This easy slow-cooker soup is flavored with sausage and Italian seasoning.
Ingredients
- 1 32 oz. can petite diced
- tomatoes
- 4 cups water
- 1 can pitted ripe olives
- 16 oz. can whole kernal
- corn (undrained)
- 2 16-oz. packages Kielbasa sausage
- 1 large onion
- 2 medium sized sweet peppers
- 2 large potatoes (diced in
- bite size pieces)
- Italian seasoning to taste
- (I use 3 Tbls.)
- Salt and ground black pepper

Method
Pour undrained tomatoes, water, olives, and corn into your slow cooker. Slice kielbasa into 1/2 inch round chunks and add to pot. Slice onion and peppers into strips and add to pot. Dice potatoes and add to pot. Season with Italian seasoning, salt, and pepper. Cover and cook on low-heat setting for 6 to 8 hours or on high-heat setting for 3 to 4 hours.
Notes: This is our traditional Christmas Eve dinner, because it is ready whenever my family gets here from Houston. We like to make a big pan of cornbread to eat with this soup, but garlic bread also works.
