Laurie's Bean Soup


Lima beans with ham and vegetable make a tasty, healthy dinner--just let it cook in your crock pot all day and come home to an enticing aroma.



Ingredients:

  • 1 lb pkg large lima beans
  • 1 1/2 cups seasoned ham pieces
  • 1/4 cup chopped onion
  • 2-3 medium carrots, peeled and cut into small pieces
  • 1 medium smoked sausage, cut into bite size pieces (optional)
  • 1/8 tsp ground mustard
  • 1/8 tsp soul seasoning
  • 1/8 tsp seasoned salt
  • Pepper to taste
  • Enough water just to cover

Method

Quick soak, rinse and sort beans in a large pot. Add 6-8 cups hot water and bring to a boil. Boil 2 minutes and remove from heat. Cover and let stand 1 hour. Drain water and rinse beans. Combine all ingredients in large crock pot and stir well. Cook 8-9 hours on low or about 6 on high, or to desired consistency.

Notes: I like to serve this with fried potatoes and corn bread. Soul seasoning is a blend of spices--if you can't find it in your store, check the Internet.
