Mexican Fiesta Beef Soup

This crock pot soup contains ground beef, onion, corn, tomatoes, black beans and rice, plus Mexican beer, chicken broth and taco seasoning mix.
 

Ingredients

  • 1 pound ground beef
  • 1/2 cup finely chopped onions
  • 1 12 oz bottle Mexican beer
  • Chicken broth - 4 cups
  • 2 cups rice
  • 1 can black beans, drained
  • 1 can or 2 cups fresh corn kernels
  • 1 can or 2 cups fresh tomatoes
  • 1 can black olives
  • 1/4 cup of lime or lemon juice
  • Packet of Taco seasoning mix or fresh Mexican spices
  • Avocado slices and sour cream for garnish

Method

Cook hamburger and onion until meat is browned. Combine cooked meat and all other ingredients (except garnishes) in a crock pot and allow to slow cook on low for 1-2 hours. Add more warmed chicken broth if you wish, to desired consistency for soup.

 

Notes: This recipe can be adjusted to taste by adding red pepper.
