Mexican Pork Roast


A pork roast, seasoned with cumin, is cooked in a crock pot with salsa until tender. The meat is shredded and served on tortillas.



Ingredients:

  • One 2 to 3 lb pork roast
  • 2 Tbsp cumin
  • Salt & pepper to taste
  • 8 oz bottled salsa
  • 1/4 cup water
  • Flour tortillas
  • Sour cream, grated cheese, guacamole, black olives, lettuce, and/or chopped tomatoes, as desired

Method

Place pork roast in a crock pot. Sprinkle with salt, pepper and cumin. Pour salsa and water over roast; cover, and cook on low heat setting for 8 hours or until very tender. When done, remove from crock pot, take two forks and pull the pork apart, discarding any bones. Serve on warmed tortillas with any or all of the following ingredients: sour cream, grated cheese, guacamole, black olives, lettuce, chopped tomatoes.
