Mom Ellen's 2-Alarm Chicken Chili, Texas Style

Adjust the heat in this chili to your liking by adding more or less cayenne pepper, or add bottled hot pepper sauce.
 

Ingredients

  • 2 pounds cooked boneless, skinless chicken breasts
  • 1 large can diced tomatoes
  • 2 cans great northern beans or kidney beans
  • 1 to 2 cups chicken broth
  • 1/3 cup Chili Powder
  • 1 Tbsp. minced Garlic
  • 2 tsp. cayenne pepper
  • 1 Tbsp. Paprika
  • 1 tsp. ground Cumin
  • 2 tsp. salt
  • 1 Tbsp. Onion Flakes
  • 1 tsp. dried Oregano, crushed
  • 2 Tbsp. cornstarch, masa or any thickening agent

Method

Do not drain tomatoes or beans. Place all ingredients in a slow cooker and cook on low 6 to 8 hours. For "1-Alarm" chili, add 1 tsp. red pepper; for "2-Alarm" chili, add 2 tsp. red pepper; for "3-Alarm" chili or hotter, add additional red pepper to taste. (For "False-Alarm" chili, leave red pepper out.) Serve over rice, if desired.

 

Notes: You can substitute cooked coarse ground or diced beef chuck, round steak, stew meat, venison, or turkey.
