Nana's Chicken

Chicken and sausage is cooked with mushrooms, onion, tomatoes, potatoes, and wine. Serve with crusty bread.
 

Ingredients

  • 3 lbs chicken thighs-skin removed, bone in
  • 2 linguica sausages, sliced 1/2 inch thick
  • 1 heaping teaspoon minced garlic (jar)
  • 20 medium-sized white button mushrooms- quartered
  • 1 medium yellow onion- sliced into circles, than quartered
  • 3 large tomatoes, seeds removed from two of them
  • 3 medium-size yukon gold potatoes, peeled and cut into 1/2 inch thick pieces
  • 2 sweet potatoes (NOT YAMS!), peeled and cut into 1/2 inch thick pieces
  • 1/2 cup dry red wine
  • 1/2 cup water
  • fresh parsley
  • fresh cracked black pepper
  • salt

Method

Place chicken and sausage in slow cooker then top with remaining ingredients. Cook on low-heat setting for 10 hours. Add salt pepper and parsley, let rest for 10 minutes. Serve with hard rolls or other crusty bread- and lots of butter!
