Not Yo Momma's Crock Pot Chicken

This easy crock pot recipe combines chicken tenders, bean soup, Portuguese sausage, green pepper, onion, sour cream and Italian parsley.
Ingredients
- 2 large jars of your favorite bean soup (I like Trader's Joe's Portuguese Bean Soup, but any works fine)
- About 6 chicken breast tenders, cut into chunks
- 1 Portuguese sausage (Linguica), chopped into chunks
- 1 green pepper, chopped
- 1/2 an onion, chopped
- Sour cream
- 2 Tablespoons chopped Italian parsley

Method
Saute the pepper and onion - add chicken, just to brown a little. Add chicken, pepper and onion and jars of soup to crock pot. Heat on high for 4 hours. Serve with a little sour cream and chopped parsley.
Notes: What's great about this is, if you don't have the ingredients or the time, you can easily omit the pepper, onion, sour cream and parsley, and it's still an amazing and healthy dinner, with almost no effort and very little clean up!
