One Pot Pork and Cabbage Roast


This dish is simple to prepare and makes for a hearty meal with leftovers.



Ingredients:

  • 1 4-6 lb pork butt
  • 3 teaspoons kosher salt
  • 2 teaspoon fresh ground pepper
  • 1 large onion, quartered
  • 2 tablespoon extra virgin olive oil
  • 1/2 cup water
  • 1 medium head cabbage, quartered and sliced

Method

Preheat oven to 300 degrees. Rub roast with 2 teaspoons salt and 1 teaspoon pepper. In a Dutch oven, brown roast in 1 tablespoon extra virgin olive oil. Add onion and water, then cover and cook for 3 1/2 hours. With 1 hour remaining, add cabbage and remaining salt, pepper and olive oil.
