Pete's Whole Roasted Chicken & Vegetables~crock Pot or Oven

This is a crock pot version of my Dad's oven roasted chicken and vegetables. It is full of flavor and I always think of him when I make it~either way.

  • Servings: 4-6
  • Prep Time: 20 min
  • Cook Time: 3-4 hrs
  • Total Time: 3-4 hrs + prep time

Ingredients:

~cooking Spray
~2 Cans Brand-name Chicken Broth, i use swanson's
~1 Lb Carrots, peeled, cut in 2" pieces
~3 Lbs Potatoes, cut in large chunks
~1 Large Sweet Yellow Onion, cut in wedges
~1 Stick of Butter, sliced
~2 Tbsp Morton's Nature's Seasons
~1 Whole Chicken, 4-5 lbs
~2 Tbsp Evoo, extra virgin olive oil
~more Morton's Nature's Seasons
~paprika, (optional) as much as you like

Directions:

Spray crock pot, bottom and sides. Turn on high. Pour broth in crock pot. Layer vegetables in order of recipe, sprinkling Nature's Seasons over each layer. Dot with butter slices. Rinse and pat dry chicken (remember to remove the giblets.) You can toss them or use them later for stock. Rub with EVOO, sprinkle Nature's Seasons and paprika for color and taste. Place Chicken breast side down on top of vegetables. Cover. After 1 hour, turn temp to low. Cook for 3-4 hrs total. Do not lift lid until you are checking for doneness (about 3 hours into cooking); if need be cook 1 more hour, then turn heat down to warm or off.
