Polish Pork Bites

Pork tenderloin cubes and Polish sausage slices are cooked in the crock pot with sauerkraut & apple, in broth flavored with caraway & vinegar.
 

Ingredients

  • 2 lbs fresh sauerkraut
  • 2 Tablespoons caraway seeds
  • 1 cup vegetable broth
  • 1 Granny Smith apple, peeled, cored and coarsely chopped
  • 1 medium red onion, diced
  • 2 Tablespoons red wine vinegar
  • 2 Tablespoons dark brown sugar
  • 1 tsp salt
  • 1 tsp freshly ground pepper
  • 1, 1 lb pork tenderloin, cut into bite size pieces
  • 1 lb kielbasa (or Polish) sausage, cut into bite size pieces

Method

Combine all ingredients in crockpot; cook for 6 to 8 hrs on low.

 

Notes: If you want it a little bit sweeter you can add a cup of raisins.
