Popeye Crockpot Soup

A healthy main-dish soup that's simple to prepare when you make it in your crock-pot--just add all ingredients and check back after 6 hours.
 

Ingredients

  • 3 boneless chicken breasts, cut into bite size pieces
  • 2 cans chicken broth
  • 1 can cream of chicken soup
  • 1/2 onion, chopped
  • 1 1/2 cups celery
  • 1 1/2 cups carrots
  • 1 can lima beans
  • 1 can cannelloni beans
  • 1 pkg frozen chopped spinach, thawed and squeeze out liquid
  • 1/2 cups uncooked white rice
  • Pinch of dill
  • Salt and pepper to taste

Method

Combine all ingredients in crock pot and cook on high for 6 hours. Add spinach the last hour of cooking time.

 

Notes: My grandkids love when I invent new soups. They helped me name this one because it is so good for you. You can add any other seasonings or different beans, it always turns out yummy. If it gets too thick you can always add more water or chicken broth.
