This pork stew is prepared in the crock pot and is served with a lot of veggies in a great red chile sauce.
Cut meat into large bite-sized pieces and place in the crock pot. Pour chile powder mixture, onions, garlic and spices over meat and let it cook on low to medium setting for 3 hours. Stir in stewed tomatoes, potatoes and vegetables.
Cook on high for an additional 1-1/2 hours, stirring occasionally. Serve with warm tortillas.
