Pork Adovado Stew


This pork stew is prepared in the crock pot and is served with a lot of veggies in a great red chile sauce.



Ingredients:

  • 11/2 lb boneless pork stew meat (or roast cut up)
  • 14 oz can stewed tomatoes, cut up
  • 3 medium red potatoes, quartered
  • 1/2 of a medium sliced bell pepper
  • 1 small white onion, sliced
  • 3 peeled carrots, cut to 1" pieces
  • 2 celery stalks, chopped
  • 2 cloves chopped garlic
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup New Mexico red chile powder (liquefied with 1/2 cup water)
  • 11/2 teaspoons salt
  • Black pepper to taste
  • 1 package of flour tortillas

Method

Cut meat into large bite-sized pieces and place in the crock pot. Pour chile powder mixture, onions, garlic and spices over meat and let it cook on low to medium setting for 3 hours. Stir in stewed tomatoes, potatoes and vegetables. Cook on high for an additional 1-1/2 hours, stirring occasionally. Serve with warm tortillas.
