Portuguese Bean Soup


Portuguese sausage, also known as linguica, is often available in Latin American markets. It's used in this soup along with ham, canned kidney beans, carrots, potato, cabbage, and tomato liquid, cooked in a crock pot.



Ingredients:

  • 1 lb. ham, cubed (1/2-inch)
  • 1 lb. Portuguese sausage, cubed (1/2-inch)
  • 2 medium carrots, large diced
  • 1 large onion, large diced
  • 1 can (15 oz) red kidney beans, drained & rinsed
  • 1 medium potato, cubed (1/2-inch)
  • 1 small cabbage, shredded
  • 1 can (12 oz.) tomato paste
  • 1 to 2 quarts water
  • Salt and pepper to taste

Method

Place ingredients in the order above in a 5- to 6-quart crock pot. Dilute tomato paste with some of the water. Pour tomato paste mixture over all ingredients, using enough water so that it barely covers the cabbage. Cook on high for 5 to 6 hours. Season to taste before serving.
