Sausage Spanish Rice

A hearty Spanish rice dish made from sausage that is simmered in a crock-pot with peppers and chilies.
 

Ingredients

  • 1 lb. fully cooked polish sausage, cut into 1/4" slices
  • 2 cans (14 1/2 oz. each) diced tomatoes, undrained
  • 2 c. water
  • 1 1/2 c. uncooked converted rice
  • 1c. salsa
  • 1 medium onion
  • 1/2 c. chopped green pepper
  • 1/2 c. chopped sweet red pepper
  • 1 can (4 oz.) chopped green chilies
  • 1 envelope taco seasoning

Method

In a slow cooker, combine all ingredients; stir to blend. Cover and cook on low for 5-6 hours or until rice is tender.
