Savory Mozzarella Beef Stroganoff

Tender, seasoned roast beef in a rich dark gravy with noodles--an easy, hearty crock-pot meal.
 

Ingredients

  • 2-4 pound round chuck roast
  • 2 1/2 Tbsp salt
  • 2 1/2 Tbsp pepper
  • 2 1/2 Tbsp meat tenderizer
  • 2 1/2 Tbsp garlic powder
  • 4 garlic cloves
  • 1 large green bell pepper
  • 1 large vidallia (sweet) onion
  • 2 cups shredded mozzarella cheese
  • 2 pk brown gravy mix
  • 2 cup hot water
  • 3 cups egg noodles

Method

Wash beef under cold water. Place water in crock pot and season with 2 tbsp salt, 2 tbsp pepper, 2 tbsp garlic powder, and 2 tbsp meat tenderizer. Chop bell pepper and onion into small cubes (fine chop) and add to crock pot. Cut small slits in roast and place four whole cloves of garlic in slits and season meat with remainder of dry ingredients. Place roast in crock pot and let cook on high heat 5 hours or on low heat 8 hours About 30 minutes before cook time is up, add in 3 cups of egg noodles (may add 1 cup of hot water if water level is low) and add in brown gravy mixes according to package. Prior to serving, top with shredded Mozzarella cheese or fresh mozzarella (optional).

 

Notes: Cheese of choice for topping can be substituted. I have used white cheddar, gorgonzola, brie, and goat cheese.
