Short Rib Barbeque Delight

These ribs cook in a crock-pot to get perfectly tender and they are prepared with veggies, potatoes and cranberries for a great meal.
 

Ingredients

  • 2 lbs fresh pork short ribs, country style
  • 1 jar Holland onions
  • 2 cans whole peeled potatoes, bite size pieces
  • 1 can whole cranberries
  • 2 tablespoons tomato paste
  • 1 cup smoky barbeque sauce
  • 1 fresh onion, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, diced
  • 8 ounces of shredded cheddar cheese
  • 1/2 cup water

Method

Cut the fat off of the ribs and set aside. Dice the celery and onions and put in the crock pot. Put crock pot on high and place the meat on the celery and onions. Do not stir. Scatter the diced garlic over the meat, and then scatter the shredded cheese over the meat. Pour the barbeque sauce and the cranberries over the mixture, still not stirring. Place the tomato paste in the half cup of water and pour over the mixture. Put the potatoes over the top and season with salt and pepper. Keep on high until the meat appears cooked, this will depend upon your crock pot.
