Slow-Cooker Beef and Vegetable Stew

This hearty and delicious stew is perfect for the cold winter days , and by adding lots of vegetables and low-sodium beef stock I make it extra healthy for my family and everyone loves it !

Ingredients:

3 lb Beef Stew Meat, cut into 1 ½" pieces
1 tsp Kosher Salt
1 tsp Freshly Ground Black Pepper
1 tsp Sweet Paprika
2 Tbsp Cornstarch, or you can use all-purpose flour
2 tsp Olive Oil
3 Medium-size Carrots, cut into 1" chunks
1 Parsnip Cut Into 1" Chunks
1 Red Pepper, diced
1 Green Pepper, diced
1 Celery Root, cut into 1" chunks
3 Celery Ribs, diced
2 Medium Onions, diced (2 cups
5 cloves Garlic, chopped
2 Tbsp Tomato Paste
1 tsp Chili Paste, sambal oelek
3 cups Low-sodium Beef Stock
1 cup Dry Red Wine
2 Bay Leaves
½ cup Loosely Packed Cilantro or Parsley Leaves, chopped for serving

Directions:

-pat dry the beef (I like to use paper towels to do this)

-preheat a large skillet; season the meat with 1/2 tsp of salt, pepper, and paprika and coat it in the cornstarch or flour and shake off any excess.

-add the oil to the skillet ,and brown the meat few pieces at a time over medium-high heat

-transfer to a 7 quart slow-cooker

-prepare the vegetables; add the carrots, parsnip, red and green peppers, celery root and celery stalks over the beef in the slow-cooker

-add the diced onions to the skillet (where you browned the meat) and cook over medium heat until tender; add the garlic and cook another minute; stir in the tomato paste and chili paste; add the beef stock and the red wine and scrape up any browned bits; add 1/2 teaspoon salt, freshly ground pepper and the bay leaves; bring to a simmer and pour over the meat and vegetables in the slow-cooker

-mix well; cover and cook on low for 8 hours

The meat and vegetables will be tender and the sauce rich and delicious. Garnish with the fresh chopped cilantro or parsley !

Helpful Tips:
