Slow-Cooker Chicken

A broiler-fryer chicken, with a lemon and bay leaf "stuffed" in the cavity, is cooked very slowly in an electric crockery cooker.
 

Ingredients

  • 1 3-pound broiler-fryer chicken
  • Salt and pepper, to taste
  • 1/2 to 1 lemon, quartered
  • Bay leaf

Method

Remove giblets and rinse chicken well. Sprinkle the cavity and the outside with salt and pepper. Place lemon and bay leaf inside cavity. Place chicken on a rack in the slow electric cooker. DO NOT ADD ANY LIQUID. Cook on low heat setting for 7 to 8 hours. Place the liquid that forms in the refrigerator and, when cold, discard the fat. Use these juices as a base for gravy.

 

Notes: I usually cook my chicken overnight or all day. The liquid makes great gravy. I sometimes freeze the breast meat for sandwiches or for use in any recipe that calls for cooked chicken, such as chicken salad.
