Slow Cooking ,Fast Eating Carnitas

These Mexican roll-ups are full of tender, cooked pork spiced with taco seasoning. Add your favorite toppers, such as tomato, lettuce and cheese.
 

Ingredients

  • 1 pork shoulder roast (3-4 lbs.)
  • 1 package taco seasoning mix
  • 2 cloves garlic, crushed
  • Juice of one lemon
  • 1 package flour tortillas
  • (your choice of size)
  • Lettuce, shredded like for tacos or burritos
  • Tomatoes, chopped
  • 1 package shredded Mexican cheese (size depending on how much you like)
  • Other items you may like in tacos: cilantro, salsa, sour cream, avocados, etc.

Method

Place roast in slow cooker. Add taco seasoning, garlic, lemon juice. Add about 1 cup of water. Cover and cook until tender (about 6-8 hours on high, 10 hours on low.) Remove meat and shred. Heat tortillas on griddle until hot, but not brittle. Place shredded meat on each tortilla; add lettuce, tomatoes, cheese, salsa or whatever you like and roll up. Then eat!

 

Notes: A healthy, low fat meal!
