Spicy Chicken Artichoke Soup

This fresh soup is prepared with marinated artichokes, garbanzo beans, and corn. The jalapeno adds a lot of flavor and a little bit of heat.
 

Ingredients

  • 1 can cream of chicken soup
  • 1 can corn, drained
  • 1 can garbanzo beans, drained
  • 1 can chicken stock
  • 2 jars marinated artichoke hearts, rinsed and chopped
  • 8 oz sour cream
  • 1 stick butter
  • 1 tbsp pepper
  • 1 tbsp season salt
  • 1 tbsp crushed red pepper
  • Jalapeno juice
  • Jalapenos, diced
 
Method

Add all ingredients to a crock pot and cook on high 6 hours. Top with Monterrey cheese and corn tortilla strips.
