The Jamacian Jerk Ziti


The taste of the Caribbean with an Italian flair--succulent jerked goat meat combines with the zesty baked ziti for a wonderful meal.



Ingredients:

  • 3 lb goat meat (or mutton, without bones)
  • 1 pkg (16 oz) ziti pasta
  • 1 jar (26 oz) spaghetti sauce
  • 1 container (15 oz) ricotta cheese
  • 1 pkg (8 oz) shredded mozzarella cheese, divided
  • 1/4 cup 100% grated parmesan cheese
  • 2 Tablespoons of Castella crushed red pepper
  • Super Jerk Rub:
  • 1 1/2 cup onion, finely chopped
  • 4 to 6 cloves of garlic, finely chopped
  • 1 Tablespoon fresh thyme leaves (or 2 Tablespoons dried leaves)
  • 2 teaspoons salt  
  • 2 teaspoons ground black pepper
  • 1 Tablespoon ground pimiento (allspice)
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1/4 cup Grace browning sauce
  • 2 Tablespoons Blue Mountain burnt sugar
  • 2 Tablespoons of Blue Mountain Jamaican meat seasoning
  • 1/4 cup of  Angostura teriyaki sauce
  • 1/4 cup of Walkerswood traditional Jamaican jerk seasoning (hot & spicy or milder varieties)
  • 2 Tablespoons of Walkerswood Hot Jamaican Scotch Bonnet pepper sauce
  • 1 very hot pepper, chopped (optional)

Method

Mix or puree together the jerk sauce, browning sauce, onions, garlic, soy sauce, and spices to form a paste. Dice the goat (or mutton) meat then rub the paste all over the meat. Any unused paste (also known as "super-jerk rub" can be stored in a glass jar in the refrigerator for up to a month for later use). Cover or wrap in foil and refrigerate overnight to allow spices to penetrate meat. Preheat the oven to 350 degrees F. Roast the meat loosely covered with foil in a roasting pan for one hour. Remove the foil and cook for an additional 30 minutes. Cook pasta as directed on package. Drain pasta, reserving 1/2 cup of the pasta cooking water. Preheat oven to 350 degrees F. Mix spaghetti sauce, ricotta cheese and reserved 1/2 cup pasta cooking water in large bowl. Add pasta, jerked goat (mutton), and 1/2 cup of the mozzarella cheese; mix lightly. Spoon into 13 x 9 inch baking dish sprayed with cooking spray, sprinkle with the crushed red pepper,remaining mozzarella cheese, and the parmesan cheese; cover. Bake 30 minutes and uncover. Bake an additional 10 minutes or until heated through.
