Tuscan Bean Soup


An easy to make, crockpot soup with white beans, Italian sausage links and rosemary.



Ingredients:

  • 2 cans white beans (navy or cannellini)
  • 1/2 onion diced
  • 2-3 Italian sausages sliced
  • 3 Tbsp olive oil
  • 1 tsp sea salt
  • 4 sprigs fresh rosemary
  • 1/4 tsp nutmeg
  • 1-2 cups water

Method

Saute 1/2 of onions and sausage in skillet. Add to crockput. Next saute (on low-medium) remaining onions and 1 can beans in a little olive oil with 2 sprigs of rosemary. Place half of pan in food processor and puree. Add other half to crock pot. Add rest of ingredients to crock pot and then transfer puree to crock pot, too. Cook on low for 2-4 hours.
