Vegetable Beef Soup for Crockpot

A healthy vegetable soup prepared in your crock-pot with beef stew meat, tomato puree and frozen vegetables.
 

Ingredients

  • 1 to 1.5 pounds beef stew meat, browned
  • 1 28 oz can tomato puree
  • 1 lb bag frozen mixed vegetables
  • 1 16 oz can diced tomatoes, undrained
  • 3 tbsp beef bouillon
  • 6-7 shakes Tabasco sauce
 
Method

Brown meat in a skillet with a small amount of cooking oil. While it's browning, empty tomato puree into crock-pot. Fill empty tomato puree can with water, add to crock-pot and stir. Add tomatoes and bag of frozen mixed vegetables. When meat is browned, add to crock-pot. Add beef bouillon and Tabasco sauce then mix well. Cook on low for at least 5 hours (up to a maximum of 10 hours). If desired, add 1 cup of uncooked pasta about halfway through the cooking time.

 

Notes: My kids like this soup thick so sometimes I add the pasta at the time I put everything into the crock-pot.
